Fried-n-Rined Chicken
If you love fried chicken but hate the high-carb breading, then you’re in for a tasty treat with this deep-fried favorite. Our scrumptious recipe ingeniously utilizes spicy pork rinds as the breading to cut down on excess sugar content. Yeah, it sounds a little trailer-trashy, but give it a try! I bet you that your friends won’t be able to taste the difference between this soon-to-be favorite and a bucket of KFC!
Prep time: 1 hour
Ingredients:
4 pieces of chicken breast
Salt
Pepper
1 tablespoons of poultry seasoning
1/4 cup of parmesan cheese
1 tablespoon of crushed red pepper flakes
1/4 cup of heavy whipping cream
2 yolk-free egg whites
3 tablespoons of Tabasco sauce
1 bag of spicy pork-rinds

Ingredients:
4 pieces of chicken breast
Salt
Pepper
1 tablespoons of poultry seasoning
1/4 cup of parmesan cheese
1 tablespoon of crushed red pepper flakes
1/4 cup of heavy whipping cream
2 yolk-free egg whites
3 tablespoons of Tabasco sauce
1 bag of spicy pork-rinds
Canola oil
Instructions:
1. Pour the canola oil into your deep fryer, and heat the oil to about 370 degrees. (You can fry this chicken in a pan, if a deep fryer is not available.)
2. Rinse, de-fatten, and pat dry chicken with paper towel.
3. In a clean bowl, mix your salt, pepper, poultry seasoning, parmesan cheese, and crushed red pepper flakes.
4. Coat each piece of chicken thoroughly in your seasoning mix.
5. Refrigerate the newly-seasoned chicken for 30-45 minutes.
6. Meanwhile, whisk your heavy whipping cream, egg whites, and Tabasco sauce in another clean bowl.
7. Mince your spicy pork rinds in a food processor. (If you do not have a food processor, simply put your rinds in a plastic seal-bag and crush them thoroughly.)
8. Remove the refrigerated chicken.
9. Soak the chicken in your creamy liquid mixture and then roll the chicken in your crushed pork rinds. (Make sure the chicken is completely coated in pork rinds to ensure a full and tasty breading.)
10. Place all four breasts of chicken into your deep fryer and sizzle for 20 minutes in deep fryer. (If you are pan frying, remember to fry both side of your chicken evenly.)
11. After frying, pat dry your chicken pieces to remove excess oils and fats.
12. Plate up and enjoy!
