Ever wish there was such a thing as heart-healthy mashed potatoes? Well, wish upon a sugar-free star no longer! This cauliflower-crammed concoction is bound to trick your taste buds while satisfying you inner-potato craving!
Ingredients
1 package of frozen cauliflower
3 tablespoons of water
1 package of frozen cauliflower
3 tablespoons of water
½ cup of heavy whipping cream
¼ cup of sour cream
2 tablespoons of butter
¼ cup of grated Parmesan cheese
¼ cup of sour cream
2 tablespoons of butter
¼ cup of grated Parmesan cheese
Salt & Pepper (to taste)
Instructions
- Place the frozen cauliflower in a covered, microwave-safe bowl with 3 tablespoons water.
- Microwave on high for 8 minutes or until thoroughly cooked.
- Transfer the cooked cauliflower into a colander and use the bottom of the bowl to press out as much extra moisture from the cauliflower as possible. (The less moisture that is left in the vegetables, the better!)
- Place the drained cauliflower into a food processor (or blender, if processor is not available).
- Add ½ cup heavy cream, 2 tablespoons butter, ½ cup of sour cream, salt, pepper, and grated Parmesan cheese.
- Process thoroughly until the mixture is smooth and creamy.
- Plate up, serve immediately and enjoy!
